Also, I've been watching my garden and dug under the vines where my beets are and found a few that were big enough to harvest. I didn't have to, I'm sure more are ready also but got a few. I showed them on facebook for ideas. I ended up just nuking them with a bit of water to cook them and then I found a recipe online for quick pickled eggs and have 8 eggs and the cut up beets in the fridge now. Here is a quick shot of them. It made one jar. You use 8 boiled eggs, I cut up my beets and put on top. Then it is 1/2 C. vinegar, 1/2 C. water, 1/4 C. sugar, and 1/2 tsp. cinnamon heated up to melt the sugar and then pour into the jar. I've taken it out and shook it a couple of times. Will try later and let you know how they turn out.
