Pressure Canning

A friend and I got together today and cut up and put together the four quarts and three pints of beef stew.  Everything was raw packed, meat, potatoes, carrots, celery, & onion.  When the stew went into the canner she peeled sweet potatoes while I got jars ready and then I cut them up and filled the jars.  The sweet potatoes were grown in my garden.  I have four that were starting plants so we cut that portion off and they are now in water and I saved one to bake.  Nine jars were filled with a very light brown sugar syrup and the other eight jars were just plain water so I can throw them in with fried potatoes.  I love the mix of white and orange.

This picture is of all the jars done today and best of all is they ALL sealed!
