Pork Canning


Smith's had pork loin on sale for 99 cents a pound, I bought two large packs.  I put one in the freezer and cut up the one into 1" chunks and stuffed them into 6 quart jars.  I added garlic, onion, and salt to each jar and about 1/2 C of water.  I processed for an hour and 40 minutes.  The book said to do 1-1/2 hour but at my elevation to add 10 minutes.  Now to find recipes to make with it.  I think we'll have BBQ sandwiches tonight with it to try it.  I also have hamburger and chicken in the freezer I got at a great price but it is time for the Kingman Cancer Care Craft Fair and I'll be busy getting some new stuff ready.
