A friend brought me 5# of carrots so I decided to can them. I had bought a case of pints of Anchor Hocking jars at Big Lots. No more saving $$ for me. I made a couple of mistakes. I did not read the recipe all the way through. I sliced them up using the food processor, added a heaping tablespoon of brown sugar and water bathed them. The lids that came with the jars buckled and after cooling went down. Then I talked to my group Rebel Canners on Facebook and was told rings too tight (no, they were just finger tight) and I was supposed to pressure cook. If I had read to the bottom of the recipe, yes, it said pressure cook. I removed all the lids that came with the jars, put new ones on them and pressure cooked them all. They look fine, haven't tried any yet.
Pork is on sale at Smiths, I'm thinking of running and buying a big one and pressure canning it. I have a case of Granny Smith apple coming and a bucket of tart cherries. YUM! I made a pie with my 3 year old apple pie filling on Sunday. It was awesome, I can still make a couple more.
And then I find this company called Zaycon that sells bulk meat, and my neighbor wants to split a cow. Hmmm, should we?
